At 800 meters above Netro, the Candorno farmstead is run by Pietro, Arcangelo and Paola, who carry on a farming tradition handed down from previous generations, keeping alive knowledge and practices that respect the landscape. The farm raises cattle of the Pezzata Rossa d'Oropa breed, suitable for mountain pastures, and produces milk that is processed in the farm's Toma Valle Elvo dairy, using artisanal raw methods. It also produces butter from affioramento and seasoned and smoked ricotta, recovering traditional recipes. Production is limited and varies seasonally, ensuring that cheese is always available, while ricotta is only available during cool periods. The butter from affioramento is recognized as a Slow Food Presidium.
