The company, active since 1985, cultivates saffron, apples, pears, plums and vegetables on terracies in Coggiola (BI), and operates a nursery of old varieties of apples in Grignasco (NO), with about 200 varieties collected in 30 years. Recently, it has initiated the cultivation of ancient roses to produce syrup and gelatin, with a field-collection of 350 plants from 12 locations. Enrico Covolo also owns a collection of 150 ancient books on the subject and organizes formative meetings.
